Serves 4 | Time: 30 minutes | Difficulty: A little more effort
Ingredients
- 100g YAMAS! Labneh
- 1 tsp garlic paste
- 1 tbsp lemon juice
- 2 anchovies, finely chopped and crushed into a paste
- 15g finely grated parmesan cheese, or vegetarian alternative
- 2-3 tbsp milk
- 2 blocks of YAMAS! Haloumi, into thick slices
- Handful of flour
- 2 eggs
- 2 tbsp hot sauce
- 100g cornflakes
- 2 tbsp honey
- Lettuce, cucumber and cherry tomatoes to serve
Method
- First make the Caesar dressing by mixing the YAMAS! Labneh, garlic paste, lemon juice, anchovies, parmesan and milk into a bowl using a fork. Season with salt and pepper and mix until you have a thick dressing. Put to one side.
- Crack the eggs into a bowl, whisk until smooth
- Place the cornflakes into a freezer bag and roll with a rolling pin until you have a fine crumb.
- Pour the cornflake crumbs onto a plate and put the flour onto another plate.
- Roll each YAMAS! Halloumi slice in the flour until coated; then dip it in the egg mix; then roll it in the cornflake crumb until coated.
- Heat a drizzle of oil in an non-stick pan and fry the YAMAS! Halloumi on medium heat for a couple of minutes on each side until golden and crisp.
- Mix the honey and the hot sauce. Then whisk together and gently warm it through in the microwave for a few seconds.
- Drizzle around half of the hot honey over the fried YAMAS! Halloumi.
- Arrange the salad onto 4 plates. Top with the YAMAS! Halloumi slices and dollop the YAMAS! Labneh dressing. To finish drizzle over the hot honey and add a little black pepper and some croutons if you like.
A super-flavourful dinner that is both fabulous comfort food and a summer sensation!
