Halloumi and Bacon Topped Sourdough
Say bye-bye to boring bacon butties and say hello to halloumi and bacon-topped sourdough! Ideal for breakfast, brunch or lunch.
YAMAS! top tips for success: don’t be tempted to leave any ingredients out, cook the bacon and halloumi as crisp as you like them, and then prepare to be delighted as you tuck into this array of glorious textures and flavours!
Serves 4 | Time: 20 minutes | Difficulty: Easy
Ingredients
- 1 pack YAMAS! halloumi, cut into 8 slices
- 4 slices of sourdough
- 8 slices of streaky bacon
- 1 avocado
- 8 cherry tomatoes
- 1 lime, juiced
- Runny honey
Method
- In a bowl, mash the avocado with the lime juice and some seasoning. Set aside.
- Cut the cherry tomatoes into quarters and season with salt and pepper. Set these aside too.
- Grill or fry the bacon until crisp.
- Pan-fry the halloumi slices until golden brown.
- Toast your sourdough – and then it’s time to layer these babies up!
- Spread the avocado on the sourdough, and top with the bacon and tomatoes before adding the halloumi.
- Drizzle over a generous helping of honey and then serve with a fresh pot of coffee!
