Feta Salad with Charred Corn
Level up your salad with the glorious taste of tangy feta with sweet, charred corn.
This feta salad recipe makes a super easy lunch or healthy dinner with zesty flavours and bursting with texture. Make a big bowl full and enjoy it throughout your week (if you can make it last that long!).
Serves 4 | Time: 30 minutes | Difficulty: Easy
Ingredients
- 200g YAMAS! feta, crumbled
- 2 corn on the cob
- 200g cherry tomatoes, halved
- ½ large cucumber, chopped
- 1 avocado, chopped
- 400g tin chickpeas, drained & rinsed
- Handful of green olives, halved
- 1 lemon, juiced
- 3 tbsp extra virgin olive oil
- Handful of basil leaves
- 1 tsp chilli flakes
Method
- Heat a pan and dry fry the corn, turning often until charred and cooked through.
- Slice the kernels from the corn and add them to a bowl.
- In a separate bowl, combine the oil and lemon juice and season to taste.
- Add the remaining ingredients to the bowl with corn kernels.
- Toss the mixture with the dressing.
- Serve and enjoy the burst of flavours in your feta salad dish!
