Prawn Saganaki with Feta

Escape to the Mediterranean with our Prawn and Feta Saganaki! Juicy prawns & creamy YAMAS! Feta come together in a chunky tomato and vegetable sauce to create a beautifully balanced dish, finished with fresh herbs and a touch of chilli.

Serves 4 | Time: 35 minutes | Difficulty: A little effort
Ingredients
- 100g YAMAS! Greek Feta
- 1 pack of king prawns
- 3 tablespoons olive oil
- 2 garlic cloves, finely chopped
- 3 tomatoes, chopped
- 1 courgette, diced
- 1 leek, diced
- A handful of olives, halved
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon chili
- 1 teaspoon paprika
- 1 tablespoon tomato purée
- 1 cup water
- A handful of fresh parsley and dill, chopped
Method
- Pour the olive oil into a frying pan on a low heat and stir in the garlic for a minute.
- Add the tomatoes, courgette, leek, and olives, stir well and cook for 5-6 minutes on medium heat.
- Season with salt, pepper, chili, and paprika to taste.
- Add the tomato purée, stir well with water, and simmer for 5 minutes on low heat.
- Stir in the king prawns and cook for an additional 10 minutes on low heat.
- Top with YAMAS! Feta cheese and garnish with parsley and dill to finish.
