Smoky Fajitas with Reduced Fat Grilling Cheese
Who doesn’t love taco night?
This wonderful recipe from our friend Amy Sheppard will mean you never have to reach for the pre-made taco kits again because it’s so easy to make and utterly delicious.
With crispy grilling cheese and juicy vegetables cooked in smoky, Mexican spices, you will have a feast for friends and family in no time. Once cooked, lay all the elements in separate bowls on your table and then let everyone load their tortilla wraps however they wish!

Serves 4 | Time: 25 minutes | Difficulty: Easy
Ingredients
- 200g YAMAS! Reduced Fat Grilling Cheese
- Oil for frying
- 1 red pepper, finely sliced
- 1 yellow pepper, finely sliced
- 1 onion, finely sliced
- 1 tbsp tomato puree
- 2-3 tbsp water
- 1 tsp cumin
- 1 tsp chilli powder
- 1 tsp ground coriander
- 2 tsp smoked paprika
- 8 small flour tortillas
Method
- Cut the grilling cheese into slices, then cut the slices in half so they resemble chips. Place them in a bowl.
- Place the spices in a small bowl and stir until combined. Spoon roughly a third of the spices over the grilling cheese and use your hands to ensure that all the pieces are coated.
- Heat a drizzle of oil in a large non-stick frying pan on medium heat.
- Add the grilling cheese sticks to the pan and fry for 5 minutes, turning regularly until they are starting to turn a golden brown. Remove from the pan and set aside.
- Heat a little more oil and add the peppers and onions. Stir for 5 minutes until soft.
- Add the remaining spices. Fry for one minute.
- Finally, stir in the tomato paste and 2-3 tbsp of water – enough to loosen the mixture a little.
- Briefly heat through before serving on warmed tortillas with your favourite taco toppings like sour cream and guacamole.
