Serves 4 | Time: 30 minutes | Difficulty: Easy
Ingredients
- 375g rigatoni pasta
- 225g block of halloumi
- 1 tbsp flour
- 3 tsp of piri piri seasoning
- 1 red pepper, finely sliced
- 1 onion, finely sliced
- 1tsp tomato purée
- 200g soft/cream cheese
- 150ml pasta water
- 70g fresh spinach, roughly chopped
- Salt and ground black pepper
Method
- Cut the halloumi into cubes.
- In a bowl, mix the flour and 1 tsp of piri piri seasoning. Add halloumi cubes, ensuring they are dry and coated.
- Heat a drizzle of oil in a large non-stick frying pan. Fry the halloumi for 5 minutes, turning occasionally until golden brown and crisp.
- Meanwhile cook the pasta in boiling, salted water for about 10 minutes. Reserve 150ml of the starchy pasta water.
- Once golden, set the halloumi aside and add another drizzle of oil to the pan. Fry the peppers and onion for 5 minutes until soft.
- Stir in the tomato purée and the remaining 2 tsp of piri piri seasoning. Fry for 1 minute, stirring continuously (careful, it’s getting spicy now!).
- Add the soft cheese and slowly stir in the pasta water. Mix in the chopped spinach and fried halloumi, then season to taste with salt and pepper.
- Gently bring to a boil.
- Add the drained pasta to the sauce and stir until all ingredients are combined.
- Finish with a sprinkle of black pepper – then serve immediately and enjoy your flavourful piri piri halloumi pasta!
Add a cheeky, spicy spin to your next pasta dish!
